Crispy Rice Salmon Bowls: A Flavor-Packed Dinner With Serious Crunch

These Crispy Rice Salmon Bowls turn simple ingredients into a colorful, satisfying meal built around perfectly cooked salmon and golden, crunchy rice. The crispy rice adds texture while creamy avocado, cucumber, and a spicy sauce balance the richness of the fish. It is an easy way to create a restaurant-style bowl at home without requiring complicated cooking techniques.

Difficulty: Easy

Ingredients

  • 1½ pounds salmon fillets
  • 3 cups cooked white rice, preferably chilled
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon sesame seeds
  • 1 avocado, sliced
  • 1 cucumber, diced
  • 2 green onions, sliced
  • ½ cup shredded carrots
  • 1 tablespoon sesame seeds

Spicy Mayo

  • ½ cup mayonnaise
  • 1–2 tablespoons sriracha
  • 1 teaspoon sesame oil
  • 1 teaspoon lime juice

Preheat the oven to 425°F (220°C) and season the salmon with soy sauce, garlic powder, and a little sesame oil. Place it on a baking sheet and roast for approximately 12–15 minutes, or until the salmon flakes easily with a fork. While it cooks, spread the chilled rice onto a lightly oiled baking sheet, pressing it down into an even layer. Drizzle with sesame oil and roast alongside the salmon until the edges become golden and crisp, turning once if necessary.

While everything cooks, prepare the toppings and sauce. Combine the mayonnaise, sriracha, sesame oil, and lime juice in a small bowl, adding more or less hot sauce according to your preference. Dice the cucumber, slice the avocado and green onions, and prepare the carrots. Keeping the toppings fresh and crunchy provides a great contrast to the warm salmon and crispy rice.

To assemble the bowls, divide the crispy rice between four bowls and top with chunks of roasted salmon. Arrange the cucumber, avocado, carrots, and green onions around the salmon, then drizzle generously with the spicy mayo. Finish with sesame seeds and an extra splash of soy sauce or lime juice if desired.

For the best crispy rice, use cold, cooked rice, since it contains less moisture and holds together better during roasting. You can also prepare the rice in an air fryer for an especially crunchy finish. Serve the bowls immediately while the rice is crisp, and customize them with edamame, seaweed, pickled ginger, or extra chili sauce for even more flavor.
