Ingredients

  • 1½ pounds baby potatoes
  • 8 small flour or corn tortillas
  • 1½ cups shredded cheddar or Monterey Jack cheese
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup sour cream
  • 1 avocado, diced
  • ½ cup chopped tomatoes
  • 2 green onions, sliced
  • Fresh cilantro, for serving
  • Lime wedges, for serving

Start by preheating the oven to 425°F (220°C). Place the potatoes in a large pot of salted water and boil for approximately 12–15 minutes, or until they are just tender when pierced with a fork. Drain them well and allow them to cool for a few minutes. Arrange the potatoes on a lined baking sheet, then use the bottom of a glass or measuring cup to gently press each one until flattened. You want them thin enough to become crispy around the edges while remaining soft in the middle.

Drizzle the smashed potatoes with olive oil and season them with smoked paprika, garlic powder, cumin, salt, and black pepper. Roast for 25–30 minutes, flipping once halfway through, until the edges are deeply golden and crisp. During the final few minutes, sprinkle the potatoes with shredded cheese and return them to the oven until the cheese has melted. Meanwhile, warm the tortillas in a dry skillet or microwave until soft and flexible.

To assemble the tacos, place one or two crispy smashed potatoes inside each tortilla and gently break them apart so they spread across the surface. Add sour cream, diced avocado, tomatoes, green onions, and fresh cilantro. A squeeze of lime over the top brings everything together with a bright acidity that balances the rich potatoes and melted cheese. For extra heat, add sliced jalapeños or your favorite hot sauce.

For the crispiest potatoes, make sure they are well drained before smashing them and avoid overcrowding the baking sheet. The more surface area exposed to the hot oven, the better the texture will be. These tacos are best served immediately while the potatoes are still crunchy, making them a simple but creative dinner that turns inexpensive ingredients into something far more exciting.
