Chill time: 6 hours
Total time: About 7½ hours

Difficulty: Intermediate

Ingredients

For the crust

  • 2 cups chocolate cookie crumbs
  • 5 tablespoons melted butter

For the cheesecake

  • 24 oz full-fat cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream
  • 6 oz melted semi-sweet chocolate

For the pistachio layer

  • 5 oz kataifi pastry, finely chopped
  • 2 tablespoons butter
  • ¾ cup pistachio cream
  • 2 tablespoons tahini

For the topping

  • 4 oz melted chocolate
  • 2 tablespoons chopped pistachios

Preheat the oven to 325°F (165°C) and line the bottom of a 9-inch springform pan. Combine the chocolate cookie crumbs with melted butter and press the mixture firmly into the bottom of the pan. Bake for about 8–10 minutes, then allow it to cool. For the cheesecake filling, beat the softened cream cheese and sugar until smooth, then add the eggs one at a time. Mix in the vanilla and heavy cream, followed by the melted chocolate, being careful not to overmix.

Pour the filling over the cooled crust and bake for 50–60 minutes, or until the edges are set while the center still has a slight wobble. Turn off the oven, crack the door open, and allow the cheesecake to cool gradually for about an hour before transferring it to the refrigerator. Chill for at least 6 hours, preferably overnight, so the cheesecake can fully set.

For the signature Dubai chocolate filling, melt the butter in a skillet and add the chopped kataifi pastry. Cook over medium heat for 5–7 minutes, stirring frequently, until deeply golden and crisp. Remove from the heat and stir in the pistachio cream and tahini. Once the cheesecake is completely chilled, spread the pistachio-kataifi mixture evenly over the top.

Finish with melted chocolate and chopped pistachios, then refrigerate for another 15–20 minutes to allow the topping to set. Slice with a warm, sharp knife and serve chilled. The creamy chocolate cheesecake, crunchy kataifi, rich pistachio cream, and chocolate topping create the combination of textures that makes this dessert so irresistible.
