- 1½ lb boneless, skinless chicken thighs or breasts

- 2 cups corn kernels

For the sauce
- ½ cup mayonnaise
- ¼ cup sour cream
- Juice of 1 lime
- 1 garlic clove, minced
- ½ teaspoon chili powder
Season the chicken with chili powder, smoked paprika, garlic powder, cumin, salt, and pepper. Heat the olive oil in a large skillet over medium-high heat and cook the chicken for approximately 5–7 minutes per side, depending on thickness, until golden and cooked through. Allow it to rest for a few minutes before slicing. In the same skillet, add the corn and cook for several minutes until lightly charred.
For the street-corn sauce, combine the mayonnaise, sour cream, lime juice, garlic, and chili powder in a small bowl. Taste and adjust the seasoning as needed. The sauce should be creamy, tangy, and slightly spicy. If you prefer more heat, add a pinch of cayenne or a little hot sauce.
