The Best Chocolate Lava Cake Recipe: Rich, Gooey, and Decadent

Few desserts are as impressive for so little effort as a Chocolate Lava Cake. These individual cakes have a delicate, rich exterior that gives way to a warm, molten chocolate center when cut open. Made with just a handful of ingredients and ready in under 30 minutes, they are an excellent choice when you want a restaurant-quality dessert at home.

Prep time: 10 minutes
Cook time: 12–14 minutes
Total time: 25 minutes
Servings: 4
Difficulty: Easy

Ingredients

  • 4 ounces high-quality semi-sweet or dark chocolate
  • ½ cup unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • Pinch of salt
  • Butter and cocoa powder, for preparing ramekins
  • Powdered sugar, for serving
  • Vanilla ice cream or fresh berries, optional

Preheat the oven to 425°F (220°C) and generously butter four small ramekins, then dust them lightly with cocoa powder. Melt the chocolate and butter together in a heatproof bowl, either over a saucepan of gently simmering water or in the microwave in short intervals. Stir until completely smooth, then allow the mixture to cool slightly.

In a separate bowl, whisk the eggs, egg yolks, sugar, vanilla, and salt until slightly thickened. Slowly whisk in the melted chocolate mixture, then gently fold in the flour until just combined. Divide the batter evenly between the prepared ramekins, filling each approximately three-quarters full. Avoid overmixing once the flour has been added, as this can make the cakes heavier.

Bake for 12–14 minutes, watching carefully toward the end. The edges should be firm and set while the centers remain slightly soft. The exact baking time can vary depending on the oven and size of the ramekins, so it is better to slightly underbake than overbake if you want a molten center. Let the cakes rest for about one minute before carefully turning them onto serving plates.

Dust the warm cakes with powdered sugar and serve immediately with vanilla ice cream, whipped cream, or fresh berries. The combination of warm chocolate cake and cold ice cream makes this dessert particularly indulgent. For the signature molten center, the most important step is simply not overbaking the cakes. Once you cut into the middle and the chocolate flows onto the plate, you have the perfect Chocolate Lava Cake.
